Broccoli Soup

Sometimes, all I want is a nice warm soup, like today. I woke up, and I was craving for warm soup. Soup it is then! I had every ingredient in my kitchen. I just needed to chop everything up and cook. Blender will do the rest. It doesn’t take long to cook the sweet potato if you chop it into small cubes. It will cook in 5 minutes. Then, it probably needs another 5 mins to cook the broccoli. Grind heaps of black pepper. It makes the soup really yum. After everything is cooked. Just blend and season. It’s ready for you. You can have it warm or cold. The chicken stock can be replaced with vegetable stock. I garnished with some chopped pistachio and fried onion. A little bit of cheese or cream would be nice too. 🙂 Hope you enjoy the recipe! INGREDIENTS: Sweet potato – 150g, chopped into small cubes Broccoli – 370g, chopped Garlic cloves – 2, chopped Onion – 1/2, chopped Butter – 20g Freshly ground pepper – 1/4 teaspoon …

Cauliflower Miso Soup

I love cauliflower. It is probably one of my favourite vegetables. The best thing about cauliflower is that it is so easy to cook. Sometimes, I just break the head into small pieces and cook it with some butter. Once it’s cooked, season with salt and fresh ground black pepper. it’s just delicious! Today’s recipe is a simple cauliflower soup with miso paste. If you like creamy soup, you will like this one. There are many ways of making a cauliflower soup. You can make it with blue cheese if you like  a strong flavour. The thickened cream or yoghurt will make it creamier. You can also cook it with potatoes or carrots. Personally, I think cauliflower soup goes well with many different spices/herbs. I have tried coriander, parsley, paprika, and cumin seeds. I use oregano for today’s recipe. I hope you enjoy the recipe. 🙂 Makes 2 servings. INGREDIENTS Coconut oil – 2 tbsps Onion – 1, chopped Garlic cloves – 3, chopped Cauliflower – 1/2, broken into small pieces Potato – 1, small, chopped Chicken …

Roasted sweet potato and capsicum soup with prawns

Anyone likes soup? I know I do. I love soup. All sorts, hot, warm, cold, sweet, spicy, creamy, vegetable or chicken soup. There is nothing better than a bowl of hot soup waiting for you in a Winter morning. The Winter morning is so crisply cold. When you get up and walk towards the kitchen, you can smell the fresh baked bread. When you walk into the kitchen, you can see the steam is rising from the soup, cloud the air above the bowl…and mixed with the aroma of the bread just came out of the oven…. Well, I really love that. However, the winter in Brisbane is not that cold. Still, soup is my favorite dish in the winter. I made the roasted sweet potato (kumara) and capsicum soup today for lunch. Here is the recipe. Hope you like it. 🙂 Serves 2 INGREDIENTS 2 sweet potatoes 1 red capsicum 1 green onion – sliced 8 medium peeled prawns (shrimp) 1 tablespoon finely grated ginger sea salt and black pepper 1 tablespoon soy sauce olive oil …
