Damper with Feta

I only found out about damper a month ago after I have been living in Australia for over four years. Shocking! I love it! I made one yesterday for our dinner party. Everyone liked it. It was so easy to make and so delicious. So I have to create a post to share it with you guys. It’s really a great solution for a quick bread.  After it’s baked, it is crispy outside and soft on the inside. Damper is a traditional Australian soda bread that is baked on campfire by swagmen. Basically, it’s made from flour, water or milk, and butter. Personally, I think it tastes a little bit like savoury scones without so much butter and egg. In this recipe, I add feta cheese, dill and pine nuts. Unfortunately, I ran out of sun-dried tomatoes. Monday!I need chocolate cookies!

Hello there! I wish everyone is having a great day! 🙂 Somehow Monday is always the busiest and longest day of the week for me. If I need something to lift my mood, it will be these chocolate cookies. 🙂 Crisp, crunchy, full of dark chocolate and almonds. It goes well with tea or coffee. I don’t like milk chocolate much, but I am a super fan for dark chocolate. Studies show that dark chocolate actually helps us to deal with stress and improve our brain function. See, a good reason to have a little bit of dark chocolate everyday. However, don’t over indulge. 😉 I always have some Lindt 70% or 85% Extra dark chocolate bars in my kitchen. I used 85% one in this recipe. I love Lindt dark chocolate. (No Ads here!) The texture is extra smooth. The taste is very well-balanced. This chocolate cookie recipe is simple and easy. Broccoli Tofu Bites

I have to say these are yummy and healthy. I made two batches last week. My husband loved it. He had some for dinner and then popped two more in his lunch box. Normally, he is not a big fan for broccoli and tofu. This recipe has three of my favourite ingredients. Broccoli is full of fiber and vitamins, and Tofu is a good source of protein, iron and calcium. Then, there is the black rice/Forbidden rice, which is packed with antioxidants and fiber. (Fiber! The more the better! 🙂 ) I reckon it’s another way to eat more vegetables and tofu. I used store-bought tea infused firm tofu. You can just use firm tofu instead if you can’t find one. They are super easy to make. If you have a food processor or a blender, it will do all the work for you. My food processor is not big enough, so I just let it chop everything for me. Black Rose Tea Infused Tofu

Tofu is a good source of protein, iron and calcium. It has a lot of health benefits. Although it doesn’t have much taste, tofu absorbs the flavours from other ingredients very well when you cook it. That’s the way to make tofu tasty. One of my favourites is black tea infused Tofu. It can be prepared beforehand and stored in the fridge. You can use it in salad, some stir-fry dishes, grill it, or just eat it directly cold. The taste is quite mild with a light tea flavour. You only need few ingredients to cook this marinated tofu, cinnamon bark, Star anise, bay leaves, and tea of your choice. I used black rose tea this time, which had strong rose aroma. It turned out quite well. Feel free to add some other spices you like. Some dry chilli flakes maybe if you like spicy food. Tofu has high water content. Scallion Pancakes (olive oil version)

I probably mentioned in my previous posts that my mom came here for a visit last month. Since she only can stay with us for two months, I must make the most of it during her stay. Apple Rose Pie

One of our friends had a trip to an apple farm and brought boxes and boxes of apple back. These apples are so good, sweet, juicy and crunchy. Totally my type of apple. Since I got so many in my kitchen, I have been trying all sorts of way to cook/eat the apples when they are still fresh. I use them in my salad, dessert, to cook with pork or make some apple juice. I made these apple rose pies yesterday. It turned out pretty and tasty. I love the way it looks and how simple it can be made. I used some cranberry sauce I made yesterday in the pie. Speaking of the cranberry sauce, it’s from my last bag of frozen cranberries. Soft Oregano Garlic Cheese Bread

I have been loving soft bread for the past few weeks. Just couldn’t stop baking them. So easy to make!  My favourites are the one with pork floss, green onion and mayonnaise, and the sweet bread with peanut butter and black cherry jam. You can see the photos on my Instagram, here. Everyone just loved it! It was gone in few minutes. Nothing can make me happier than that. When I was tidying up our herb garden yesterday, I found the oregano we planted few weeks back has been growing madly. I feel the urge to use some of it before any pest gets it. When I was waiting for the dough to rise, I washed and picked the oregano leaves.  At the beginning, I thought I just add some olive oil and pine nuts to make a pesto paste. Cinnamon Matcha pudding

I pretty much like everything with matcha, tea (of course!), ice cream, or pancakes. Matcha powder is fine powder made from green tea leaves. It has so many health benefits, boosting metabolism, burning calories and detoxifying. I normally get my matcha powder from our local tea shop. I love this cinnamon matcha powder. They also have turmeric matcha and vanilla matcha powder too. I think I will give them a try when I visit the shop next time. The cinnamon gives extra flavor to the normal matcha powder. It’s perfect for brewing a cuppa. I also love to use it in making desserts.These delicious cinnamon matcha puddings are very easy to make. Prepare the day before, leave it in the fridge. They are ready to serve the next day. I serve it with fresh fruits, cream or both. It’s a wonderful treat for myself, my friends, or my guests. Gelatin powder is used in this recipe. Cauliflower Miso Soup

I love cauliflower. It is probably one of my favourite vegetables. The best thing about cauliflower is that it is so easy to cook. Sometimes, I just break the head into small pieces and cook it with some butter. Once it’s cooked, season with salt and fresh ground black pepper. it’s just delicious! Today’s recipe is a simple cauliflower soup with miso paste. If you like creamy soup, you will like this one. There are many ways of making a cauliflower soup. You can make it with blue cheese if you like  a strong flavour. The thickened cream or yoghurt will make it creamier. You can also cook it with potatoes or carrots. Personally, I think cauliflower soup goes well with many different spices/herbs. I have tried coriander, parsley, paprika, and cumin seeds. I use oregano for today’s recipe.
