One of our friends had a trip to an apple farm and brought boxes and boxes of apple back. These apples are so good, sweet, juicy and crunchy. Totally my type of apple. Since I got so many in my kitchen, I have been trying all sorts of way to cook/eat the apples when they are still fresh. I use them in my salad, dessert, to cook with pork or make some apple juice.
I made these apple rose pies yesterday. It turned out pretty and tasty. I love the way it looks and how simple it can be made.
I used some cranberry sauce I made yesterday in the pie. Speaking of the cranberry sauce, it’s from my last bag of frozen cranberries. No more! 😦 Oh, can’t tell you how much I love it!
Anyway, I hope you enjoy this post. The Pie is very pretty. I love it as a dinner dessert with some icing sugar and whipped cream! 🙂
Makes 2 6-inch pies
INGREDIENTS
- Firm apples – 5 or 6 (Royal Gala or Pink Lady)
- Lemon juice – 1/2 lemon
- Caster sugar – 80g
- Ground cinnamon – 1 teaspoon
- Frozen puff pastry – 2 sheets.
- Butter – 2 tablespoons, melted
- Cranberry sauce – 2 tablespoons
- Brown sugar – 1 tablespoon
- Water – 1 tablespoon for the cranberry juice
- Water – 1 tablespoon for the apple
INSTRUCTIONS
- Wash and dry the apples. Cut the apples in half and scoop out the cores. Slice the apples and put in a large bowl.
- Once finish slicing the apples, add lemon juice, caster sugar, cinnamon and one tablespoon of water in the bowl. Gently stir to make sure the apple slices are coated with lemon juice, sugar and cinnamon.
- Microwave about 2-3 minutes. Check in between to make sure not overcook the apples. Once the apple slices are soft and easy to bent, take the bowl out of the microwave and set aside to cool.
- Preheat the oven to 190 ºC.
- Spray some olive oil on the pie plates. Fit the puff pastry sheet in the pie plates. Trim the pastry around the edges.
- Use a fork to poke holes on the pastry and brush with butter.
- Put cranberry sauce, brown sugar and one tablespoon water in a small bowl and mix well. Microwave for 1 minute.
- Spread cranberry sauce on the pastry.
- Time to arrange the apple slices. Start from outer edge, arrange one apple slice at a time, cut side down, skin side up. One overlap another about 1/3 of the slice.
- When work on the inside rows, try to use your finger to push the apple slices against the previous row. It makes sure all the apple slices stand up a little so more slices would fit in. I hope that makes sense.
- At last, roll one slice of apple tightly and fit it in the middle.
- Bake for 40 – 45 minutes.
- Once it’s baked, let it cool completely. Dust with icing sugar. Serve with or without cream.

Note: If you cut the apple slices to thin, it’s likely that it starts to burn before it’s baked thoroughly. Just cover with a sheet of foil to prevent it from burning further.
